Las Minas is one of the food trucks in a food truck park. Stopped by to grab dinner for two on a Friday evening. There were five food truck options, including Las Minas. We ended up getting El Grande Shuco and an order of Chuchitos to split between two. The food took about 15 minutes to come out. Great service. They were kind enough to bring out the food to us on trays as we were sitting at one of the tables available for dining on site. It was a bit cold, but the warm food hit the spot. Accepts cash or card. Plenty of parking available.

We were so happy to find authentic Guatemalan food! We had chuchitos, a shuco, and rellenitos. Everything was delicious and we liked that there was a covered seating area.

Such kind people and good food! I’ve never tried guatemalan food but when I saw them in the food truck lot I knew I had to try!! The stuffed dessert platanos were really good. Gonna come back for more ☺️
